   # MELAI KOFTA FORM #To make Mali Kofta we will first make Kofta. For this, take a boiled potato peel in a bowl and mash well. Now take a separate bowl and add the grated paneer, mashed potato, corn flour, red chilli powder, garam masala powder, finely chopped cashew nuts and currant and mix well.  
    Make this round and round koftas by making this mixture. Now put oil on an embroidery gas and keep it warm. After the oil is heated, add 3-4 Koftas and fry them over and over till the golden brown on medium-low flame. Likewise, keep all the other koftas in the same way. Now your koftas are ready. Now to make gravy, grind onion and tomatoes separately and make fine paste.
    Now put oil in a pan and heat it over the gas. Once the oil is heated, add lentil sugar, cinnamon leaf, long and cardamom to it and fry it. Then add the onion paste to it and fry it well until brown. Then put ginger and garlic paste in it too. After a little fry, mix it with tomato puree and cook for 3-4 minutes.  
   Now add turmeric, red chili powder, garam masala powder and cashew paste and fry it well until the oil comes out with spices. Now add 2 cups of water and cook on low flame for about 10 minutes.  
   Then put salt and casserole fenugreek in it. Then add the cream kofta in it and mix it with light hand and mix it and now turn the gas off. Now your skin is ready to be Kofta. Take it out in a serving dish and garnish with green coriander and cream and eat and serve.

Stuffed bitter gourd

  Due to being bitter gourd and bitter gourd, it is not the first choice in catering, but if the bitter gourd recipe is best cooked then there is no reason why the first choice is not made.

Recipe for bitter gourd
Wash the karas well. Peel off with a knife. Put small half teaspoon of salt in the shavings and keep it for 15 minutes. Cut bitter gourd from the side but its other side is connected. 
    Now with the help of a knife, remove seeds and pulp from inside the bitter gourd. Repeat the kneaded bitter gourd again (nowadays more kadbi do not get bitter, but if you do not like the bitter taste of bitter gourd then take about 1 teaspoon of salt in it and apply a little salt to the inside and outside for half an hour Wash it well with water and take out the water.) Prepare all the bitter gourds in such a way.
      Now wash the shavings with water 2-3 times and squeeze the water. Put 1 table spoon of oil in a small pan and heat it. Put asafetida and cumin seeds in hot oil. After roasting cumin, add turmeric powder, coriander powder powder, roasted with 2-4 times a spoon. Put the pulp, shavings, amchoor powder, red chilli powder and salt out of bitter gourd in this spice. 

Sprinkle the spices with a spoon and fry for 6-7 minutes. This roasted masala is ready to fill in the cakes. Press one of the masala in a bitter gourd and fill it. Fill the spices in all the karnas (fill the spice in such a way that the whole bell should be filled equally). Put 3 tablespoons of spoon oil in the pan and heat it.
    Put the spices in the bitter gourd oil and cover with a lid and cook on medium flame for 6-7 minutes. Open the lid, roll the karas and cover them again. Cook the berries again for 5-6 minutes, open the lid and see the ones on which they are not cooked, make them squeeze downwards, make the bitter sour side and lower the bitter gourd in the middle.
    After turning bitter gourd, turn it over and over again. Now your stuffed burgers are ready. Serve with Puri, Paratha, Kachoda If you are going on a trip, do not forget to take the stuffed bitter gourd. If you use mustard oil, then make bitter gourds in mustard oil only, berries made from mustard oil are even more delicious.
